4 medium Kirby cucumbers (about 4 oz each), finely chopped
1/4 cup seasoned rice vinegar
2 Tbsp finely chopped red onion
1 Tbsp vegetable oil
1/4 tsp red pepper flakes
Combine all ingredients in a medium bowl and mix well.
Chill in the refrigerator for one hour to combine flavors,
Serve with your favorite dish.
