1 large egg
1/3 cup olive oil
2/3 cup milk
1 1/2 cup tapioca flour
1/2 cup cheese, grated (any cheese)
1 tsp salt (or more to taste)
Preheat your oven to 400 degrees F
Grease the wells of a muffin tin
Put all of the ingredients into a blender and pulse until smooth and thoroughly combined
Pour batter into the wells of the muffin tin. Be careful to leave about 1/8 inch of space at the top
Bake until puffy and browned (about 15 - 20 minutes)
Remove from oven and let cool for a few minutes
Serve warm
