2 cups frozen corn kernels (defrosted)
1 cup cherry tomatoes, halved
1 cup English cucumber, diced
1/2 cup finely sliced red onion
1/2 cup snipped fresh cilantro
3 Tbsp fresh lime juice
1/4 tsp fine sea salt
Defrost corn and drain.
In a medium bowl, combine the corn kernels, tomatoes, cucumber, onion, cilantro, lime juice and salt. Stir to combine.
Refrigerate for 30 minutes. Serve with your favorite taco dish.
